a simple summer salad
One recent Saturday, between running this way and that I needed to whip up a quick lunch. Searching the fridge through leftovers and other ingredients I melded together this easy summer salad that used up some Ontario asparagus I had grilled the night before for dinner. I know we’re practically at the end of asparagus season in Canada, but any fresh asparagus will do. Lightly steamed fresh green beans would work well in this recipe too.
asparagus beet salad with feta
12 stalks grilled asparagus (drizzle with olive oil and cook on a medium bbq for about 10 minutes or until softened but still crisp). Cut into 2″ pieces.
1/2 cup sliced tinned or jarred beets, sliced into bite-size pieces
1/4 cup crumbled feta
2 tbsp chopped fresh basil
Mix the above ingredients in a bowl. Drizzle with good olive oil and fresh lemon juice to taste. Finish with a few grinds of cracked pepper. This amount will make a couple of servings for a side dish or a filling meal for one.
