homemade berry yogurt popsicles

Summer’s not gone yet and it is still warm enough in Toronto for a cooling, homemade popsicle.  I had bought some plastic popsicle forms a few years ago on end of season clearance yet had never popped any into the freezer until now.

The proportions work for the size of forms I have. If unsure how much of the mixture you’ll need for your forms, fill with the moulds with water and pour into your blender to measure how much the forms will hold. Adjust the recipe for the volume of your forms.  I have a very small sweet tooth so I went sugar-free on these but a couple of teaspoons (or to taste) of honey, maple syrup, or sugar can be added.

1/2 cup mixed berry juice, unsweetened

1 cup plain yogurt

1/2 cup frozen blueberries, raspberries, strawberries or a berry mix

8 fresh blueberries or raspberries

  1. Place all ingredients in a blender and blend until smooth, with some small pieces of the frozen berries still visible in the mixture.
  2. Place one blueberry or raspberry at the bottom of each mould. Pour the mixture into each mould to just about the top. Place the caps on each and place the form in the freezer until frozen through.

When serving, run the bottom of the form under hot water for a couple of seconds to help loosen the popsicles.
